A concrete egg is used to ferment wine in the experimental bodega at the Tikal Natural Vineyards. The owner of the vineyard, Ernesto Catena, hails from one of the most influential wine families in Argentina, his father put Argentinean fine wines on the map, and now the son wants to do the same for the more esoteric varieties. Out of 1,600 Mendoza vineyards, his is one of just five with Demeter biodynamic certification.
