A cow's liver and its head hang from a trolly in a small family owned slaughter and meat packing company in Mead, Kansas. At this firm they typically slaughter ten animals each day but is one of only a few such sized companies in a region dominated by four giant meat packing plants that kill and process between five and six thousand cattle a day.
